ZUKR Golden Syrup Replacement

Enjoy our guilt-free Golden Syrup Replacement. Perfectly sweet, luxuriously rich, and unbelievably satisfying, this zero-calorie syrup is a masterpiece of taste and versatility. 

Ingredients:

  • ZUKR (Erythritol): 200 grams (1 cup)
  • Water: 240 milliliters (1 cup)
  • Xanthan Gum or Guar Gum (Stabiliser): 1/4 teaspoon 
  • Lemon Juice or Cream of Tartar (Optional, for acidity): 1/2 teaspoon
  • 1/4 teaspoon Caramel Flavour/Colour (optional - we recommend The Colour Mill or Dr Oetker)

Instructions:

  1. Dissolving ZUKR:

    • In a saucepan, combine the ZUKR and water.
    • Heat the mixture over medium heat, stirring constantly until the ZUKR is fully dissolved.
  2. Adding Stabiliser:

    • Slowly sprinkle xanthan gum or guar gum into the saucepan, continuously whisking to prevent clumping.
    • Ensure that the stabiliser is fully incorporated into the mixture.
  3. Adding Acidity (Optional):

    • Add lemon juice or cream of tartar to the mixture if you want to add a slight acidity to mimic golden syrup.
    • Stir well to combine.
  4. Simmering:

    • Reduce the heat and allow the mixture to simmer for about 5-10 minutes, stirring occasionally.
    • The mixture should thicken slightly and become more syrupy.
  5. Cooling and Storing:

    • Remove the saucepan from the heat and allow the syrup to cool to room temperature.
    • Once cooled, transfer the syrup to a clean, airtight container for storage.
    • Store in a cool, dry place, and use as needed in recipes that call for golden syrup.
